Sole with Garlic-Parsley Cream Sauce Recipe

Prepare:
1/2 cup olive oil
1/2 cup chopped fresh cilantro
2 tablespoon minced fresh garlic
2 teaspoon fresh lemon juice
4 sole fillets, 4 ounces each
1 cup heavy or whipping cream
1 teaspoon dry white wine
1/3 cup chopped fresh parsley


Here's how:
Mix together oil, cilantro, 1 tablespoon garlic and 1 teaspoon lemon juice in a baking dish. Add sole fillets and turn to coat. Cover and refrigerate 1 hour. Stir together cream, wine, 1 tablespoon garlic and 1 teaspoon lemon juice in a small saucepan and bring to a boil. Reduce to 1/2 cup. Remove sole from marinade and saute' in a skillet until just cooked through, about 1 1/2 minutes per side. Stir parsley into sauce and serve over sole.
