Fresh strawberries in whipping cream..it doesn't get much better or easier than this.

Prepare:
4 cups sliced strawberries
3 tbsp granulated sugar
2 cups whipping cream
3 tbsp icing sugar
1 tsp vanilla
8 tea biscuits or small sponge cakes
2 tbsp sifted icing sugar
8 whole strawberries

Combine sliced strawberries with sugar. Set aside for 15 minutes or until berries become juicy. Whip the whipping cream until light. Beat in icing sugar and vanilla. To assemble, cut biscuits in half. Spoon sliced berries and juice over the bottom halves of biscuits. Divide whipped cream over sliced berries. Replace tops of biscuits. Dust the tops with sifted icing sugar. Garnish each shortcake with one whole strawberry.
